
• The final result of 30 experimental batches, where we tested all factors that go into producing traditional rums. Our rum is made using a unique blend of golden molasses, and sugarcane juice, under a long and slow fermentation with an ancient Scandinavian brewers yeast, and a souring process that produces bold and flavorful esters. This process produces a mash that is then pot distilled under open flame, which adds a mild smoky note to the palate. The final spirit is bold, with a mild sweetness and a savory-smokey finish, and rested for an average of 3 months before bottling.
